Cherry Buns

Oh yes summer and hot days. I really hate it :-D, seriously I don't have clue why ppl like summer. Bec of hot, bec of holiday, bec of kids have off from school and they jumping on ur head???? Personally I didn't find something positive on summer but ok what ever lol. Anyway, one from typical summer's fruit are cherries. I remember, like kids, we were climbing on trees like monkies for grab some, we did earrings and they had totally diff taste than these supermarkets red big cherries. But around me is not  cherry tree where i can get some so I went and bought few for this dessert. 







Ingredients:

  • 1 cup warm milk
  • 1/2 tablespoon active dry yeast 
  • 4 tablespoons granulated sugar
  • 3 1/4  cups all-purpose flour 
  • 1 egg on room temperature 
  • 1 tablespoon unsalted butter, melted 
  • 1/2 teaspoon salt
  • 1 egg, beaten with fork( for egg wash)
  • cherries 

Crumb Topping Ingredients:

  • 4 tablespoons butter, cold, diced 
  • 1 tablespoon sugar 
  • 1/2 cup all-purpose flour 

Preparation:

  1. In the bowl of a standing mixer (or a large bowl, if mixing by hand), stir the yeast into the warm milk and let it sit until dissolved. In a separate bowl, whisk together , egg, butter, sugar, and salt. Add this to the yeast mixture and stir until combined. Add all the flour and stir until it forms a shaggy dough.
  2. Knead at low speed, or by hand against the counter, for 8-10 minutes, until smooth but slightly tacky. It should spring back when poked. Cover the mixing bowl and let the dough rise in a warm spot until doubled in bulk, about an hour.
  3. Transfer the dough to good non-stick surface and cut in half. Working with one piece at a time, cut each piece in half, than half again. Repeat with rest of dough to make a total of 16 pieces from the entire dough. Shape dough into balls.
  4. Butter a baking dish. Place balls of dough. Push narrow drinking glasses over the centre of each dough round to make a well in the centre.
  5. Place cherries into each and let raise them.
  6. Brush the buns with egg wash and sprinkle the tops generously with the crump mixture. 
  7. Bake at 180C for 20-25 mins or until tops are golden brown. 



Cz version:

Ingredience:


  • 1 hrnek tepleho mleka
  • 1/2 PL susenych kvasnic 
  • 4 PL cukr krystal 
  • 3 1/4 hrnku polohrube mouky 
  • 1 vejce (pokojova teplota)
  • 1PL masla 
  • 1/2 lzicky soli 
  • 1 vejce na potreni 
  • tresne

Drobenka:
  • maslo 
  • cukr 
  • mouka 

Postup:

  1. Z mleka, trochu cukru a kvasnic udelame kvasek. V mise utreme vejce, cukr, maslo, sul, pridame kvasek a promichame. Pridame mouku a vypracujeme testo. 
  2. Nechame testo vykynout. 
  3. Prendame testo na pomoucneny val a rozkrajime na 16 stejnych kousku. Vytvarujeme bochanky.
  4. Bochanky dame na maslem vymazany plech a uprostred kazdeho udelame dulek, do ktereho dame tresne. Nechame jeste chvili kynout.
  5. Potreme vejcem a posypeme drobenkou, peceme na 180C asi 20-25 min dozlatova.
