Lemon Poppy Cake

When I was lil girl i loved lemon's ice cream. It was my nr.1 for really long. Till now when I smell lemons on my mind becomes memories of sunny hot days and sticky fingers from ice cream. But I am not lil anymore, my taste changed. Usually now I use lemons only with tea (u have know that I drink tea only when i am sick). Anyway I found few lemons in my fridge and bec i wanted try something new I used them in this cake or bread, u can call it as u want. 





Ingredients:


  • 1 2/3 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 1 cup granulated sugar 
  • lemon zest from 2 lemons
  • 1/2 cup unsalted butter, room temperature 
  • 3 eggs
  • 1/2 teaspoon vanilla extract 
  • 5 tablespoons sour cream 
  • 1/4 cup milk 
  • 2 tablespoons lemon juice


Lemon glaze:
  • 1/4 cup granulated sugar 
  • 3 tablespoons lemon juice 


Preparation:

  1. In a mixing bowl mix together flour, poppy seeds, baking powder, baking soda and salt, set aside.
  2. In second bowl mix together sugar and lemon zest, use ur fingers until the mixture becomes moist and pale yellow. Add butter to mixture and whip on medium speed until pale and fluffy.
  3. Mix in egg one at a time and add vanilla with last egg.
  4. In microwave safe bowl mix together sour cream and milk, heat in microwave just until not longer cold, u want room temperature. 
  5. Add 1/2 flour mixture, 1/2 milk mixture and 1 tablespoon of lemon juice to butter mixture. Mix until combined.
  6. Add rest flour mixture, rest milk mixture and 1 tablespoon of lemon juice to butter mixture. 
  7. Bake in preheat oven 180C 40 mins. 
  8. Combine lemon juice and sugar in bowl and heat in microwave until sugar has dissolve and mixture is hot. 
  9. Remove cake from oven and brush top with lemon glaze.

CZ version:

Ingredience:
  • 1 a 2/3 hrnku polohrube mouky 
  • 2 lzice maku 
  • 1 lzicka prasku do peciva 
  • spetka jedle sody 
  • 1/2 lzicky soli
  • 1 hrnek cukru krystal
  • citronova kura ze 2 citronu 
  • pulka masla 
  • 3 vejce 
  • 1/2 lzicky vanilkoveho extraktu 
  • 5 lzic zakysane smetany 
  • 1/4 hrnku mleka 
  • 2 lzice citronove stavy 


Citronova poleva:
  • 1/4 hrnku cukru
  • 3 lzice citronove stavy

Postup:

  1. V mise smichame mouku, mak, prasek do peciva, sodu a sul. 
  2. Smichame cukr s kurou z citronu, michejte tak dlouho dokud se cukr s kurou nespoji a barva cukru je zluta (nejlepsi je pouzit prsty). Pridejte maslo a mixujte na nizke obratky.
  3. Do maslove smesy vmichame po jednom vejce, s poslednim zaroven pridame vanilkovy extrakt.
  4. V misce smichame zakysanou smetanu a mleko, v mikrovlnce  ohrejeme na pokojovou teplotu.
  5. Vmichejte pulku smesy mouky, mleka a 1 lzice citronove stavy do maslove smesy. 
  6. Pridejte zbytek smesy mouky, mleka a citronove stavy. 
  7. Peceme na 180C asi 40 min.
  8. Rozpustime cukr v citronove stave, po vyndani z trouby tim kolac hned potreme.
